Great food. Incredible setting. Wonderful climate.
That is exactly what TAZA Fresh Table promises customers and guests when they visit Tagaytay City, the country’s 2nd summer capital.
TAZA Fresh Table is Taal Vista Hotel’s new restaurant located at The Ridge overlooking the Taal Lake and Volcano.
The name “TAZA” is derived from the Arabic word Taaza which means “fresh”.
You probably want to know what makes TAZA Fresh Table different from other restaurants in Tagaytay City as well as perhaps in Metro Manila. Well, 95% of the ingredients used by TAZA are sourced from regions where they are produced, such as duck from Laguna, lobster from Batangas, mangoes from Cebu, coffee beans and black rice from Negros Island and organic herbs and vegetables from Benguet, Cavite, Batangas, as well as Taal Vista Hotel’s very own garden.
This very new restaurant just recently opened their doors last January 30, 2015. I was fortunate enough to try out their wonderful dishes a couple of days before TAZA Fresh Table’s grand opening.
I am extremely excited to share with you my experience and the kind of dishes prepared by Chef Jayme which I was able to enjoy during my visit.
Let’s get right to it then, shall we?
Dishes just as awesome as the Tagaytay climate at TAZA Fresh Table
I won’t get into every dish that I tried… instead, I’ll highlight a couple of dishes that, in my opinion, remarkably stood out based on my own personal taste.
Every now and then, I push myself a tad harder to eat more vegetables than I’m normally used to. It’s quite harder for me considering how picky I am when it comes to greens. This particular salad was not at all difficult to enjoy… and that’s saying a lot coming from an almost exclusive meat lover like me. This TAZA Fresh Table dish has organic Kale with red onions, sliced cherry tomatoes and beets. It is sprinkled with roasted cashew nuts and queso de bola (Pato brand) and given an ample amount of delicious Tagaytay pineapple-dalandan dressing.
Cream of Kale and Spinach Soup
Popeye would be proud of this flavorful and very healthy soup. You would agree that spinach and kale go perfectly well once you’ve tried this comforting specialty. It comes with a pleasantly flaky croissant-like breadstick that is a joy to munch on with the soup.
Duck and Mushroom Lasagna
This is a very flavorful dish. Unlike any kind of pasta you’ve ever tried before. This Duck and Mushroom Lasagna boasts of delicious pulled duck from Laguna with 3 kinds of mushroom – oyster, shiitake and button. It is served with béchamel sauce which greatly helps neutralize the distinct gamey flavor of duck meat. A must try when you visit TAZA Fresh Table.
Pappardelle Cacio e Pepe
Perfect for people who love their dishes simple and clean. This particular TAZA Fresh Table pasta specialty is seasoned with thyme, 3 different kinds of peppercorn and parmesan cheese. Pleasantly uncomplicated. Have at it, folks!
Tomahawk Pork Chop
Flavorful and very soft. Imagine one huge slab of beautifully prepared (and cooked) pork chop, topped with caramelized onions and plantains. Also, you’d be delightfully amused to discover that the pork chop sits on a bed of cauliflower mash with a generous amount of pork jus. Wow. This is no doubt going to be an absolute hit for anyone who wants to have a very hearty meal.
I love prawns. Who doesn’t, right? The way Chef Jayme prepares this dish for TAZA Fresh Table is by grilling prawns first then popping them inside the oven for an even finish. For the final touch, these babies are bathed in delicious Romesco sauce for a hint of flavorful garlic. Finally, bread crumbs are sprinkled over the prawns for added texture and crunch. Wow. I was able to try this out with TAZA Fresh Table’s black rice on the side (grown on Mt. Kanlaon, Negros Occidental) and cooked in chicken broth. Amazing!
Of course, every good meal should end on a sweet note. And if a good round of sweet delights is what you’re after, TAZA Fresh Table has certainly got you covered.
Molten Chocolate Cake
I really loved this TAZA Fresh Table specialty. It’s nothing like any of your typical chocolate cake. Chef Jayme uses Alfonso tablea chocolate giving this dessert a spectacular champorado taste which I could not get enough of. Add Pato queso de bola ice cream on top and you’ve got a runaway winner! OMG.
Cannoli with Ube Ricotta and Langka Cream
Another TAZA Fresh Table hit! The Ube Ricotta and Langka Cream are piped into 2 separate crispy cannolis and served one on top of the other. Not too sweet and not bland either. I loved this just as much as the Molten Chocolate Cake.

TAZA Fresh Table is one place I highly recommend you visit when you head over to Tagaytay City. Or you can actually make TAZA Fresh Table the main destination of your food trip when you feel like enjoying uniquely prepared food that tastes just as incredible as the view and climate.
Put it on your shortlist of must visit food places. You won’t regret it.
